Summer Meal Plans


As I said in my post on Saturday, I’ve been working really hard on the next set of Summer meal plans. In all honesty, these plans were slightly easier because 1. I had things set up from the Spring Meal Plans and 2. Summer recipes are so much more inspiring!

The basic idea is the same, but actually even simpler than last time: there are 4 weeks of recipes, meal plans and shopping lists, all done for you. There are no repeats, so you can repeat the whole lot after 4 weeks. I tried this last time, and 4 weeks was about the right amount of time – it didn’t feel like we were eating the same thing a lot.

Also, I know how busy families get, so all these recipes are designed to be simple and quick to prepare, but use fresh food, cooking from scratch. They are the kinds of things my family and I like to eat.

Summer Meal Plans

I’ve tried to include some barbecue options – often on the Saturday – as we have actually been having barbecue weather recently! There’s also at least one vegetarian meal each week, and two fish meals. Of course, feel free to substitute and chop and change – you can use the shopping lists and recipes straight, or you can use them for inspiration. Feel free to get a takeaway every now and again!

I’ve also taken out meal suggestions for weekend lunches, as they weren’t really working for me. We are actually out quite often at the weekend, or we might have a late brunch and not need lunch, or we might choose to use up leftovers… I needed some flexibility, and I felt that I was just putting things in for the sake of it, rather than being helpful.

There is also one meal each week which would work well if you wanted to make double and freeze half for next month. If you choose to do that, you will need to double the quantities specified in the shopping lists.

Again, each meal is designed to feed four. You will need to scale up or down according to how much your family eats.

The Recipes

Week 1

Fruit Bagel Pizzas

Salmon and Pesto-dressed vegetables

Eton Mess

Harissa Lamb and Hummus Flatbreads – use leftover lamb from the Sunday roast

Halloumi Kebabs

One-pan Cajun chicken

Thai beef salad

Chilli Prawn Linguine

Week 2

Teriyaki Beef Burgers

Summer Veggie Lasagne with Blue Cheese

Poached peaches with lemongrass

Mackerel with Courgette and Bean Salad

Lemony chicken stew with giant cous cous (Use normal cous cous if you can’t find giant.)

Asparagus, mint and lemon risotto

Fish tacos

Jerk pork

Week 3

Roasted salmon and summer veg traybake

Cherry Clafoutis

Summer Vegetable Curry

Summer chicken one-pot

Tomato and fennel salad with flaked fish

Lamb and feta skewers with greek brown rice salad

Week 4

Barbecue chicken – I have included all the ingredients for the barbecue sauce on the recipe list, but to be honest, I’d probably just buy some ready made.

Mediterranean braised lamb and cous cous

Peach and raspberry parfait

Happy Cow Burgers (This links to the recipe. The blogger made her own burger buns but you don’t have to do that!)

Za’atar chicken with fattoush (This is one of my favourite summer meals.)

Pan cooked giant prawns

    Gosh, that is super organised! We tend to eat the same basic meals, with a few variants too but tend not to plan ahead quite so much

      I used to only plan a week in advance but this helps us to have a bit more variety. We don’t stick to it religiously though!

      I try… To be honest, when I asked on my Facebook page what people would like to read more of, lots of people said they wanted posts about organising themselves! So this is part of my attempt to do that.
