Here it is! Week 1 of the meal plans for Spring. I really hope you decide to give this a go, as I know it will save you so much time and stress – everything you need has been organised for you. If you want to read my explanation of how it works, you need this post.

Fish Pie – I added a packet of prawns to this as we love them (not included in the shopping list), and omitted the sweetcorn and peas from the final dish.

Lemon Meringue Pie

Beef Noodle Soup: I will post a proper recipe later, but basically you simmer brocolli florets and pak choi in some beef stock with 1 star anise in it for about 10 minutes. At the same time, chop up a garlic clove, a chilli and 2cm of ginger finely and fry in a wok with some olive oil. Add some straight-to-wok noodles. Slice up one portion of the leftover beef from Sunday’s roast dinner and add it to the vegetables. Serve the noodles into bowls and ladle the vegetables, meat and soup over the top.

Please bear in mind that one fish pie and one portion of beef will be used later in the month, which does make it a bit more expensive.

  • Meat and Fish:
  • Fish pie mix x 2
    Roast beef joint – should serve 8-10
    8 chicken thighs
    1 chorizo
    4 Salmon steaks
    350g Pork Belly
  • Fruit and Vegetables:
    Large bag potatoes
    Spring greens
  • Broccoli
    Small piece ginger
  • Pack of red chillis
    Large bunch fresh coriander
    2 Pak choi
    Frozen peas
    2 limes
    1 bunch spring onions
    1 red pepper
    1 bag baby spinach
    800g new potatoes
    7 lemons
    Little gem lettuces
    1 avocado
    6 tomatoes
    Bag of apples
    Snacking fruit
  • Dairy and Bakery:
  • Milk – according to your needs + 800ml for fish pie
  • Eggs  – 6
  • Bread – according to your needs
  • 1 carton fresh soup
  • Sliced meat or cheese for sandwiches
    Small pot (200ml) double cream
    1 pot natural yoghurt
  • Store cupboard:
  • 1 packet medium straight to wok rice noodles
    1 jar barbecue sauce
    300g dried red split lentils
  • 1 tin light coconut milk
    2 naan breads
    1 tin chopped tomatoes
    1 tin black beans
    1 packet taco shellsHerbs and spices:
  • Turmeric
    Mustard seeds
    Cumin seeds
